Ginger-Pear Vodka Sour

~Makes 2 Cocktails~

2 pears, any variety, quartered

1/2 T honey, divided

1/2 T olive oil

1 t cardamom, plus more for garnish

1/8 t salt

1 T minced fresh ginger

1/4 c fresh lemon juice

2 egg whites

1/3 c vodka

1/4 t ground ginger

Preheat oven to 450 degrees. On a baking sheet lined with foil, place the pears skin side down (reserving one quarter of a pear for garnish) and drizzle with 1/2 tablespoon of honey and olive oil. Sprinkle on the cardamom, salt, and fresh ginger and toss. Roast the pears for 20 minutes and then set aside to cool.

In a cocktail shaker, mason jar, or blender bottle, add the lemon juice, egg whites, vodka, ground ginger, and honey. Once the pears have cooled, blend them with 1/4 cup of water and strain. If you don't have a blender, you can whisk or mash the pears with the water thoroughly and then strain. Add the pear juice to the shaker. Shake first without ice for about 15 seconds, then add ice and shake for about 30 seconds more.

Slice the leftover quarter of a pear. Rim 2 cocktail glasses with brown sugar and add ice. Pour the cocktail evenly among the glasses and garnish with a dash of cardamom and pear slices. Adjust flavorings to your choosing, you may want to add lemon juice or even bitters if you like it more like a traditional sour. Enjoy!
