A Salad for the Salad Haters

You know when you’re trying to eat healthy and the only thing that pops into your head is salad? Ugh, salad. I actually love salad, but I imagine that’s how people feel sometimes. The good news is there are plenty of other healthy dishes out there. For now though, let’s stick with a salad that’s not your typical bowl of leaves. This citrus explosion combines all of your favorite things, fruit, avocado, crunchiness, saltiness, bitterness, sweet, get the picture. The beauty of it is it doesn’t take long at all because it is so simple! Get your knife nice and sharp and follow along. Feel free to throw it all in a bowl too, the plate just makes it look pretty.


3 different citrus fruits (I chose a grapefruit, navel orange, and sumo orange)

2 red beets, steamed and peeled

1 fennel bulb

1 radish

1 ripe avocado

A handful of seeds (I did pepitas)

Good quality olive oil

Flaky sea salt


First of all, make sure to get those beets steaming unless you bought them already cooked. Then you’re gonna want to supreme those citrus fruits. Here’s how to do that: cut both ends of the fruit off, then follow along the curve of the fruit and slice the rind off. Be careful not to remove too much fruit, but also make sure there is no white left on there. After that, carefully hold the fruit in your hand and slice in between the membranes to remove each segment. If this part scares you, you can always cut the fruit in half and just slice it like you would any other fruit and vegetable.

Next, prepare your fennel. If the stalks are still attached, get rid of those but save some of the pretty fronds for garnishing later. Cut the bulb into lengthwise quarters. Ideally you’ll want to use a mandoline to get super thin slices, so if you have one put the flat side of the fennel down and shave the fennel. If you don’t have a mandoline, just put the bulb flat down onto your cutting board and slice it crosswise as thin as you can. Slice the radish as thin as you can while you’re at it! Once the beets are cooked and peeled, cut them in half and slice into half moons. Now wash your bloody hands! See what I did there?

Finally, slice your avocado nice and thin. To assemble your salad, just put it all together on a plate in your most impressive design and drizzle with olive oil, throw your seeds on there, and salt bae some flaky sea salt over everything.
